Amazing Corn Chowder

soup and breadI’ve had a bag of frozen corn in my tiny freezer for two months. This is unacceptable because the freezer is tiny and if it is full of corn, there isn’t any room for ice cream. I have my priorities.

I bought the corn when I made barley succotash and I’ve had the leftover bag ever since. When I need to add a vegetable for dinner, I often tell myself I’ll just heat up the corn, but I never do. I like corn on the cob, corn bread, and corn in things. But plain corn on the side isn’t very interesting to me and so the bag languished in the freezer.  Continue reading

Boden’s Birthday Cake

Today’s post is special because it is one cake recipe done two ways. The first way is a traditional Victoria Sandwich cake and the second way is a checkerboard cake with chocolate frosting that I made to celebrate the birth of my nephew. That’s right, I have a nephew!

On Saturday night Aaron and Katy (Ryan’s twin brother and his wife) emailed they were going to the hospital. I was jumping up and down in the street with excitement. Then Sunday Ryan and I woke up with an email and a photo of their son Boden! It’s their first kid, and our first nephew. We are an uncle and aunt for the first time!

Hazelnut Apricot Whole Wheat Bread

DSCN2442I’m really in to braids right now. Yep, braids. I haven’t had a haircut in about 7 months and my hair is getting long and unruly. I’m reluctant/too lazy/afraid to find a new hair salon so I’m rocking a braid. I’ve even been watching YouTube tutorials to discover new styles and then I take pictures and send them to my friend Anna in the US. I’m super cool, I know.

But my most impressive braid is this bread!! I am so absolutely proud of it and I’m excited to share it with you. I got this recipe from The Great British Bake Off: How to Bake. I might have mentioned it before, but I’ve become a big fan of the TV show The Great British Bake Off. After every episode I always want to get in the kitchen and make something. So recently I went to the library and checked out the book and went on a baking spree trying out all kinds of things – and the more

Plum Fruit Leather

DSCN2588I’ve gotten into a show called Sweets Made Simple on BBC Two. It’s a show where a quirky married couple makes candy. I want to make everything on that show. Boozy chocolates, rose flavored turkish delight, salted caramel! They recently made fruit leather and I was so excited. I love fruit leather.

Fruit leather also makes me feel a little nostalgic for back to school and my colleagues at Live It Learn It who are back in the US. My coworker Erica and I were a little crazy for fruit leather at the end of last school year. It was our snack of choice during the many meetings we were having. She’d have a big stash in her backpack and I’d peak through and pull out my favorite flavors. Snacks are always a nice way to pep up the workday.  Continue reading

Coronation Chicken

DSCN2327There is something wonderful about lazy rainy days. Today is one of those days. It’s a Bank Holiday which means Ryan has the day off. We spent most of the weekend out and about. Today, we get to stay in. It’s rainy and we are cozy on the couch watching episodes of Rome on Netflix. We are snacking on candy and leftovers and it is glorious. I love rainy days for lazy reasons but I also love them because it gives me the chance to cook things that are a little more complex and time consuming. On rainy days I can take my time, fix things on the wish-list that are unfamiliar, make a big mess, and not worry about the time.  Continue reading

Pecan Banana Bread

DSCN2199I know green banana bread isn’t for everyone, so if you want something a little more normal here is a recipe for a regular banana bread. I like this recipe because it’s flavorful, moist, and it’s pretty close to healthy. It’s also not as sweet as some banana breads because the only added sweetener is a little honey and apple juice. Don’t get it twisted, it’s not purely healthy because there is a lot of butter.

To figure out how much butter I need, I used my scale. I’ve wanted a digital scale for awhile and I finally bought myself one soon after I moved to London. It was on clearance at a nearby department store and I thought, “this is a sign, I’m finally going to get it.” And it’s been totally worth it! All my UK recipes are in grams and this helps measure them. It also helps me convert my US recipes more easily. For example, I know that 1 tbsp of butter equals about 14g but what the heck does that look like? Now I don’t have to eyeball it, I can measure it! It’s awesome. And yes, I know I’m a bit dorky for getting excited about measurements.  Continue reading

Popeye Muffins

DSCN2292I have three things to say about these crazy delicious green muffins.

First,  if there is a way I can put more vegetables in my food, I will do it. I know people who are anti-hiding vegetable – but not me. I’m always trying to find a way to get more veggies in my diet. I like green smoothies and these zucchini chocolate chip cookies from Animal, Vegetable, Miracle, and I like today’s muffins. When I saw a picture called “spinach Popeye muffins” on Pinterest, I knew it was something I had to try. I mean, make me strong like Popeye and they taste good? Yes please. Try not to be put off by the green muffins. They are fun looking and taste like banana bread.  Continue reading

Salmon and Soba Noodles

DSCN2234I’m going to admit something to you: I don’t know how to cook fish. Sure, I can cook seafood. I know how to make crab cakes, I like to add shrimp to this stir fry dish, and I’ve even made steamed mussels before. But actual fish? I have almost no experience.

I know one very simple recipe for salmon, and I almost never make it anymore. My mom wrote me this first salmon recipe when I was in college. I was a sophomore and moving into an apartment with some friends. No more meal plan, I was feeding myself! So my mom sat down with a spiral notebook and wrote me a few easy recipes – one of which we called “plain-ass chicken.” Another recipe was for baked salmon. Take a fillet, season with salt, pepper, and a pat of butter. Wrap it in a little tin foil packet and bake in the oven until cooked through. I’d eat that with a box of Near East rice pilaf and broccoli I had defrosted in the microwave. That was practically my signature dish. That’s the only fish recipe I really know how to make. Raspberry Honeycomb Ice Cream Pie

DSCN1961Recently I bought delicious and BBC Good Food, two UK based food magazines. I thought it would be nice to have some recipes and not have to constantly search for conversion. My oven is in Celsius and everything I buy in the grocery store comes in milliliters or grams. But I’m used to Fahrenheit and ounces and tablespoons. So, I pulled out tons of recipes and the first one I chose to make doesn’t really require too much conversion anyway. Continue reading

Barley Succotash

IMG_0425[1]It’s been hot here, although I think the temperature is finally going to break today. I know I shouldn’t complain about the weather. It’s only been in the high 20’s. Crazy I know what that means right? It’s about high 70’s, low 80’s.

You’re probably reading this thinking, um, Mariel, that’s not hot. I know – I know, I just moved from DC where it’s hotter than hell. In DC low 80’s would feel like a wonderful cold front because summer is usually 100° with about a million percent humidity. But the thing is, high 70’s is hot here because air conditioning isn’t so much a thing here. Our flat doesn’t have air conditioning, the library doesn’t have air conditioning, and when you walk down the street you never pass a store and feel the cold blast of AC. We got a fan and that helps a ton. Continue reading
